Spinach Patties (from Victoria here at ViaVerde)

  • New Zealand Spinach (from our rooftop garden) [prewashed 3 times]
  • Garlic
  • Spanish Onion
  • Shredded Carrots
  • 1 or 2 Eggs
  • Olive Oil
  • Salt/Pepper
Step by step instructions:
  1. Finely chop: Garlic, Spanish onion, Spinach , shredded carrots.
  2. Combine in a bowl with 1 or 2 eggs depending on the consistency and stir until all comes together.
  3. Heat a frying pan, warm up olive oil and place spoonfuls as small or big as you desire.
  4. Sprinkle some salt and pepper on each.
  5. Turn them once they are cooked (lightly brown) and sprinkle some salt and pepper to taste. Take them out once they are cooked on both sides.
  6. Place them in a serving dish.

You can use them by themselves, as a side dish or as a healthy addition to turkey patties on thin round flatbread.
