Alex’s Gazpacho

Serves: 4-5

  • 6 tomatoes
  • to taste Hot peppers. Alex used Chilaca
  • a few Sweet peppers: Alex used New Mexican Heritage 64 and Corbaci
  • to taste cayenne pepper
  • to taste salt and pepper
  • to taste cilantro, parsley, scallions
Step by Step Instructions
  1. Slice tomatoes, cucumber, peppers, and onion.
  2. Blend in blender (for smoother texture) or food processor (for chunkier texture).
  3. Add and adjust seasonings to taste. You can eat right away, but for best flavors refrigerate and make up to one day ahead of time.
