Sauteed Sweet Potatoes and Spinach

Serves: 4

  • 2 tablespoons olive oil
  • 2 large sweet potatoes
  • 1 1/2 teaspoons curry powder
  • 1/2 cup water
  • 1/2 cup red onion
  • 1 1/2 cups spinach
  • 1 tablespoon balsamic vinegar
  • coarse salt
  • ground pepper
Step by Step Instructions
  1. Heat olive oil in a large nonstick skillet over medium heat.
  2. Cut sweet potatoes into cubes; cook, stirring, until starting to soften, 8 to 10 minutes.
  3. Add curry powder. Cook 1 minute.
  4. Add water and chopped red onion. Cook, stirring, until water evaporates and potatoes are tender and browned, about 10 minutes. Transfer to a bowl.
  5. In the same skillet, cook spinach in two batches, adding the second batch when the first wilts (2 minutes).
  6. Drain spinach; add to potatoes.
  7. Stir in balsamic vinegar; season with coarse salt and ground pepper.

You can use the leaves of New Zealand spinach from our garden for this recipe.  I tried it tonight and they worked well.  I made a few changes:

  1. I used mashed sweet potatoes from the store (Crystal Farms, Simply potatoes) so it already contained some sugar and cinamon flavoring, but don’t be discouraged, it all works well together.
  2. I started by sautéing minced garlic, chopped onion, winter savory (from our garden), in extra virgin olive oil and a little butter.
  3. Then I added the New Zealand spinach, salt, pepper, and curry powder.
  4. While that was sautéing, I started another pan with garlic and onions (optional) then added the mashed sweet potatoes to heat it up.  Once that was heated, I added the tbsp of balsamic and I mixed in the spinach with all the fixins.
  5. Last but not least it all comes together with Apple Cinnamon uncured breakfast sausages (Niman Ranch, no antibiotics, no added hormones, no animal by-products, gluten-free)  Grill the sausages, no oil necessary.  they can be chopped and eaten with the mashed potato compilaton, a tasty, complimentary, meal filled with nutrients and flavor.
