Ingredients
- 1 tbsp light olive oil or safflower oil
- 1/2 sweet onion, diced
- approx 4 cups broth
- 4 medium carrots, peeled and cut into 1/4 inch rounds
- 1 cup carrot, tops washed and finely chopped
- 1/2 cup quinoa, rinsed
- sea salt
- fresh ground black pepper
- OPTIONAL ADDITIONS: chopped celery, savory (herb),
Step by Step

First, saute carrots and onions in butter and/or oil. If you have any other veggies (like celery!), add it in.
- Then, add in carrot tops and let them suck up the buttery goodness.
- Throw rinsed/soaked uncooked quinoa on top.
- Fill the rest of the pot with broth (veggie, chicken, beef, etc) and let it cook down. Serve over tasty bread (sourdough?) and top with cheese!
